BLACK PLUM & REDCURRANT, CACAO NIBS & PEPPERCORNS This Merlot-piloted blend from Airfield contains each of the grape’s colleagues from its home turf, Bordeaux. Here, as in the Right Bank, it doesn’t play second fiddle to its half-brother, Cabernet Sauvignon. Even Petit Verdot, typically found in the vineyards of the Left Bank, makes an appearance, well-suited to the hot, dry conditions east of the Cascades. The result is robust and full-bodied, with firm tannins. Serving Suggestion:Filet mignon w/ sautéed flat beans & boiled fingerling potatoes w/ chives. Hearty empanadas w/ mole, sweet potatoes, & tempeh (or dark meat of turkey).
