TANGERINE & MANGOSTEEN, GRAPEFRUIT ZEST, PIÑA COLADA While Sauvignon Blanc isn’t one of the varieties that Washington wine lovers would be likely to count out as the state’s mainstays on five fingers. The hot, dry conditions east of the Cascades yields results similar to those of Napa or warmer mesoclimates in Chile’s Valle Central. Constituting a counterpoint to the intensely grapefruit-centric renditions of New Zealand and the variety’s home turf in the Loire Valley, this suavely tropical and mouthwateringly aromatic offering is simultaneously sultry and summery. Serving Suggestion: Grilled mahi w/ avocado & toasted corn salad. Vietnamese cellophane noodle salad w/ bell peppers, oranges, carrots, basil, & rice vinegar.
