Just 15 minutes southeast of San Sebastián, sits a small town called Astigarraga famous for its cider production, here the Bereziartua family’s sagardotegi (cider house) is seated at the town’s center, a beacon of beloved tradition. Freshly picked apples are pressed and fermented with native yeast in giant wooden casks called kupelas for at least 4 months. To get the full experience, hold the bottle high above your sidra glass and pour at an angle so that the sidra ‘breaks’ and produces a thin layer of foam at the top, pouring only 2-3 fingers length in the glass. Swiftly knock it back, and pour yourself another, as the motto here is ‘drink little, and often’. Txotx!
Serving Suggestion: Crispy slow-roasted pork belly. Moules escabeche. Pintxos gilda. Creamy leek soup. Outside with friends on a warm spring day.
