CRISP GOLDEN APPLE & LEMON ZEST, PRETTY, CHALK & TOAST Hailing from the Côte des Bar region of Champagne’s Aube (a relatively distant southeastern satellite area to the more familiar Marne department), this is a deceptively fresh-faced cuvée. True to form, it’s composed predominantly of Pinot Noir and showcases the chalky terroir of its provenance beautifully with the gentle toast and wisps of yeasty mystique that make great Champagne so difficult for other bubblies to compete with. Serving Suggestion: Croissant-crust quiche w/ smoked sturgeon, leeks, & dill. Winter salad of golden beets, acorn squash, & parsnips w/ ginger, parsley, & lemon juice.
