CASSIS & BLACK PLUM, ROASTED BELL PEPPER, FRESH & FRAGRANT Cabernet Sauvignon, like many (if not most) varieties, comes in different shapes and sizes. From the lithe, gleamingly black-fruited output of northwestern Bordeaux to the dense, decadent, and resoundingly ripe renditions of Napa, Cab’s a man of a thousand faces (sorry, Lon!). This rendition from the venerable vineyards of the Glenelly Estate carries off an impressive balancing act, bridging the brighter intensity of the grape with resolutely new-worldish inclinations, robust ripeness, and a pronounced peppery note that wouldn’t be out of place in close relatives Carmenere or Cab Franc. Gussied up with a chocolate-like richness courtesy of a year in French oak, it is delightfully multifaceted. Serving Suggestion: Beef & lamb sausage w/ coriander seeds, black pepper, & allspice. Roasted poblanos stuffed w/ savory smoked jackfruit.
