BLACKBERRY & CHOCOLATE. EARTHY GARRIGUES Yves Cheron owns tiny hillside vineyards in Gigondas and Vacqueyras and makes lovely, classic wines in his subterranean wine cellar. The solidly built reputation for firm, uncompromising structure and large stature in Gigondas holds true for this wine, but this is a decidedly "pretty" representative of the appellation. Ripe purple fruit character and a dusting of cocoa and lavender combine with firm but gracefully fine-toothed tannin. Serving Suggestion: Sweetbreads w/ puréed cauliflower and sweet & sour brussels sprouts. Beef Stroganoff with thyme and rosemary.
