RICH STRAWBERRY & SUBTLE EARTH, SILKY BODY, SOFT TANNIN Young winemaker Olivier Cailleux grows his Merlot and Cabernet Sauvignon vines on a small individual plot surrounding an old stone cross (a marker along the pilgrimage of Santiago de Compostela) where they benefit from high elevation and generous sun exposure. A palate of plush red berry fruit is backed by mellow tannins and a silky smooth body, resulting in a fresh and friendly style of Bordeaux. Serving Suggestion: Pizza w/ belly ham, fresh mozzarella, oregano, & chili oil. Tomato soup w/ field peas & wheat berries topped w/ pecorino & served w/ crusty bread.
