BLACK CHERRY PRESERVES & MISSION FIG, PORT-LIKE INTENSITY It can be lonely at the top, and Amarone is almost completely unique in the world of dry reds. Made from the concentrated nectar of half-dried grapes, it’s one of the densest, most decadent oenological experiences possible. Typically dry and high in alcohol, this beautiful beast also owes its imposing stature and luxurious lushness to low yields, old vines, and the presence of the local (but less common) grape Corvinone. Bellissimo è nerissimo! Serving Suggestion: Rare, chargrilled sirloin w/ bourbon glaze & roasted sweet potato & kale. Sheep’s milk & blue cheeses w/ pan-seared figs & balsamic reduction.
