BLACK CHERRY PRESERVES & MISSION FIG, PORT-LIKE INTENSITY It can be lonely at the top, and Amarone is almost completely unique in the world of dry red wines. Made from the concentrated nectar of half-dried grapes, it accounts for some of the densest, most decadent oenological experiences possible. Clocking in at 16% alcohol (not atypical), this beautiful beast owes its imposing stature and luxurious lushness not only to the Amarone process but to low yields, old vines, and the presence of local but lesser-used powerhouse grape Corvinone. Bellissimo e nerissimo! Serving Suggestion: Rare, chargrilled sirloin w/ bourbon glaze & roasted sweet potato & kale. Sheep’s milk & blue cheeses w/ pan-seared figs & balsamic reduction.
