The octopus is a cephalopod that needs a very particular maceration treatment, since it is necessary to break the fibers of its meat to achieve the right texture. It lives in the rocky bottoms of coastal areas and, since its breeding season is usually between September and April, these are the dates when the campaign for its capture “one by one using traditional fishing gear” takes place.
