LEMON, SLATE & YEASTY SPICE, FIRM ACIDITY The Mestres family has worked the same 80 hectares for seven centuries, with just as secure a grip on their traditions. Not only was Josep Mestres, in the early 20th century, among the earliest pioneers in Spain’s production of sparkling wine, he apparently is responsible for coining the term "Cava" as well, referring to the meticulous work and aging which occurs in the cellars (or caves) following harvest.
