PINK GRAPEFRUIT. FELINE & MUSKY. FRESH ACIDITY. In 1985, Paddy, as a way to diversify his family’s legacy of farming, decided to train as a viticulturist and winemaker. Eleven years later, he and his father began planting what is now Borthwick Vineyard. This is quintessentially New Zealand Sauvignon Blanc, with a wonderful balance of acidity and tropicality. The alluvial soil found throughout the vineyard allows for smaller, more concentrated grapes, ultimately intensifying their flavor. Serving Suggestion: Spicy grouper tacos w/ cilantro-lime crema & cotija cheese. Fish & chips. Grilled asparagus wrapped in bacon. Roasted chicken slathered in curry butter w/ tomato-cucumber-mustard seed raita.
