MULLBERRY & CHERRY, PEPPER, ASH, STEAK TARTARE While Sérol’s “Eclat de Granite” wines bear sylvan flavors reminiscent of Cabernet Franc, this wine from the Miller- ands vineyard—an east-facing hillside of densely planted vines—nods to the heady aromatics of the nearby North- ern Rhône Syrah. Vinified in cement tanks, the wine is redolent of red fruits, white flowers, and iron. The tannins linger, perfectly seasoned with salt and pepper, on the palate. Serving Suggestions:Steak tartare. Bresaola & young alpine cheese. Borscht with or without a dollop of whipped cream.
