COMPLEX & HERBACEOUS Taking its title from Akarregi Txiki’s patriarch, this wine features extended aging on the lees, imparting additional richness and intensity while still allowing it to retain a razor-sharp personality. Herbaceous, oceanic, and slightly less effervescent, it’s distinctive in its combination of chalky minerality, light grassiness, and brininess. This is one to enjoy while staring out over the dunes at the beach – with or without a plate of mussels. Topa! Serving Suggestions: Lime-seasoned razor clam ceviche or sushi.
