BLOOD ORANGE, CELERY SEED, NUTTY SHERRY HINT. This is one of the most adventurous and exciting wines we’ve tasted. An orange wine from the sherry region, aged in barrels previously used in the production of Oloroso. The “imaginary friend” of this wine is the skins of Pedro Ximenez, instead of its own Palomino skins, which winegrower Alex says are not as delicious tasting as those of PX. This is not only an exotic and interesting production method, but the wine tastes fantastic and engaging! Serving Suggestion: Grilled beef tenderloin topped w/ sauteed foie gras & drizzled w/ a Pedro Ximenez reduction & sprinkled w/ fried shallot slices.
