GOLDEN APPLE, FULL & FLORAL, CREAMY TEXTURE George Hendry has a little side gig designing particle accelerators, so it’s no surprise that his wines come off with scientific precision. This barrel fermented Chardonnay is lush and generous, and the oak aging presents as toasty spice. There’s no malolactic fermentation so the wine maintains healthy tart acidity. A beautiful California elixir. Serving Suggestions: Salmon croquettes with bread crumbs and green onion. Trout grilled with rosemary and lemon.
