RIPE RASPBERRY & FLORAL SPICE, FULL & FLESHY YET FRESH & FIRM The Saint-Victoire sub-appellation of the Cotes de Provence wasn’t demarcated until 2005, but it should come as no surprise that any area within this, what is effectively the world capital of rosé production, which manages to rise head and shoulders above its surroundings is truly special. Nestled against the slopes of of the imposing Mount Saint Victoire, these vineyards have the ability to imbue grapes with a show stopping combination of acidity and ripe, powerful fruit. Serving Suggestion: Duck carpaccio w/ fennel polen & lavender. Thin, crisp-crusted pizza w/ ricotta, basil, & halved grape-tomatoes.
